Soup Weather!

A cold snap hit the Northeast this past weekend and with it comes thoughts of cozy meals to keep us warm and snuggly. One easy recipe that you can whip up tonight is a hearty black bean soup. Chock full of fiber and protein, this will keep you feeling full and satiated. Pair it with a helping of brown rice or a piece of warm, crusty whole grain bread to really make your insides toasty!

Fit with Food’s Easy Black Bean Soup

Ingredients:

2 (15oz) cans of low sodium black beans, undrained

1 (16oz) can/box of reduced sodium chicken broth

½ cup salsa (use your favorite – choose HOT varieties to kick up the heat)

1Tbsp chili powder

1 tsp oregano

Chopped onion and cilantro (optional)

Shredded cheddar cheese (optional)

Avocado, cubed (optional)

Directions:

  1. Mash one can of beans with a potato masher or food processor.
  2. Pour both cans of beans into a medium saucepan.
  3. Add chicken broth, salsa, chili powder, and oregano and bring to a boil.
  4. Reduce heat and simmer for 5 mins.
  5. If desired, add chopped onion.
  6. Scoop into bowls and top with chopped cilantro, shredded cheese, and a few cubes of avocado.
