Looking for a quick, delicious, and vitamin packed lunch? Why not try a berry-filled smoothie? No tricky measurements necessary…just use a blender or food processor to whip up this quick treat. Throw some frozen mixed berries (about a cup) together with some yogurt (I used a tube of Stonyfield organic that my daughter eats for lunch), and a dash of juice. Blend it up for a deliciously refreshing lunch! I like to use a combination of blueberries, strawberries, blackberries, and raspberries (you can buy each individually or just use a bag of frozen mixed berries) to get a real punch of antioxidants. The yogurt adds satiating protein and a calcium boost, while the juice (you can use apple, orange, white grape, or anything you have on hand) adds a needed bit of liquid. This also makes for a great post-workout snack to refuel carbs and protein in an easily digestible way! Blend and enjoy!
