Even though we’re stuck at home this Cinco, we can still celebrate in style and have a delicious, easy, and healthy bit of Mexican! Tonight I made a quick batch of brown rice on the stove (made enough to have extra for lunches tomorrow), and heated up a pot of canned black beans. Throw those together with some low-fat shredded cheese and a cut-up avocado to top it off with a healthy fat. Sprinkle with a little black pepper and hot sauce if you want to kick it up a notch. A super quick salad of baby spinach and tomato makes an excellent accompaniment. A quick and easy meal for Cinco or any night!
